Ingredients

  • 4 large russet potatoes
  • 1 lb ribeye or sirloin steak (or flank steak/skirt steak)
  • 1 cup cheddar cheese (or pepper jack/mozzarella)
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/4 cup chopped green onions
  • 1/2 cup crispy bacon bits (or turkey bacon)
  • 1/4 cup jalapeños
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil
  • Optional seasonings: paprika, garlic powder, steak seasoning blend

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the russet potatoes thoroughly. Prick them all over with a fork to allow steam to escape. Rub them with olive oil and sprinkle with salt. Place them directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces the flesh.
  3. While the potatoes are baking, season your steak with salt and pepper. Heat a skillet over medium-high heat and add a tablespoon of oil. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from the skillet and let it rest for 5-10 minutes.
  4. While the steak rests, chop the green onions and any other toppings you plan to use. If you’re using bacon, cook it until crispy and crumble it.
  5. Once the potatoes are done, carefully slice them open lengthwise. Fluff the insides with a fork. Top each potato with shredded cheese, allowing it to melt slightly from the heat. Next, slice the rested steak and pile it atop the cheesy potatoes. Add your desired toppings: sour cream, green onions, bacon, and jalapeños.
  6. Serve the Loaded Steak Potatoes hot, and enjoy your hearty meal!
