Description

Ingredients

  • 2 cups mashed potatoes (leftovers work well)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream (optional for added creaminess)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, thoroughly combine the mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, sour cream (if using), garlic powder, salt, and black pepper until the mixture is uniform and well incorporated.
  2. Using your hands, form the potato mixture into compact, uniform 1-inch balls.
  3. Prepare three separate shallow bowls: one with the all-purpose flour, one with the beaten eggs, and one with panko breadcrumbs.
  4. Take each potato ball and roll it in the flour, dip it in the beaten eggs, and then roll it in the panko breadcrumbs.
  5. Pour vegetable oil into a deep skillet or fryer and heat to 350°F (175°C).
  6. Carefully place the breaded potato balls into the hot oil in batches. Fry each batch for 2-3 minutes until golden brown.
  7. Use a slotted spoon to remove the fried bites from the oil and drain on paper towels. Serve warm with your choice of dipping sauces.
