- 2 tbsp olive oil (if baking fresh fries)
- 1 tbsp Cajun seasoning (store-bought or homemade)

- 1/4 tsp black pepper
- Pinch of salt (if Cajun seasoning is low-sodium)
- 1 tbsp butter or plant-based butter
- 1 tbsp all-purpose flour
- 200ml milk (dairy or plant-based)
- 100g shredded cheddar cheese
- 1/4 tsp Cajun seasoning (for sauce)
- Pinch of salt and black pepper
- 4 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tbsp Dijon mustard
- 1 tsp hot sauce (adjust to heat preference)
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp vinegar or lemon juice
- 1 tsp sugar or honey
Instructions
- Prepare Your Fries: If using fresh potatoes, slice them into thick fries and soak in cold water for 30 minutes. Drain, pat dry, and toss with olive oil and Cajun seasoning.
- Bake or Air-Fry: Spread fries on a baking sheet and bake at 220°C for 25–30 minutes until golden and crispy.
- Make the Cheese Sauce: In a saucepan over medium heat, melt butter, whisk in flour, then gradually add milk, stirring until smooth and thick.
- Add Cheese: Remove from heat, stir in cheddar cheese, Cajun seasoning, salt, and pepper until melted.
- Prepare the Voodoo Sauce: Mix mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, smoked paprika, vinegar, and sugar until smooth.
- Assemble the Fries: Place fries on a serving tray, drizzle with cheese sauce, and top with optional garnishes and voodoo sauce. Serve immediately!
