- 4 potatoes, scrubbed
- 8 bacon slices
- 4 tbsp unsalted butter
- 2 garlic cloves, minced
- 1/4 cup yellow onion, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and let it drain on paper towels, leaving some bacon drippings in the pot.
- Add the minced garlic and diced onion to the pot and sauté until softened.
- Dice the scrubbed potatoes and add them to the pot with the chicken broth. Bring to a boil and then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream, butter, and half of the cooked bacon.
- Use a potato masher or immersion blender to puree the soup to your desired consistency.
- Season with salt and pepper to taste.
- Serve hot, topped with shredded cheese, remaining bacon, and chopped green onions.

- For a richer flavor, use homemade chicken broth.
