Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2 cups vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse lentils under cold water; set aside.
  2. Heat oil in a large pot, add cumin seeds and sizzle for 30 seconds.
  3. Sauté diced onion, garlic, and ginger until translucent, about 3-4 minutes.
  4. Stir in turmeric and mix well.
  5. Add the rinsed lentils and vegetable broth, bring to a boil.
  6. Reduce heat to low and simmer uncovered for about 20 minutes.
  7. Stir in coconut milk and cook for an additional 5 minutes.
  8. Season with salt to taste and garnish with fresh cilantro before serving.
