- 1 cup red lentils
- 1 can coconut milk
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 2 cups vegetable broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse lentils under cold water; set aside.
- Heat oil in a large pot, add cumin seeds and sizzle for 30 seconds.
- Sauté diced onion, garlic, and ginger until translucent, about 3-4 minutes.
- Stir in turmeric and mix well.
- Add the rinsed lentils and vegetable broth, bring to a boil.
- Reduce heat to low and simmer uncovered for about 20 minutes.
- Stir in coconut milk and cook for an additional 5 minutes.
- Season with salt to taste and garnish with fresh cilantro before serving.
