- 8 ounces mascarpone cheese
- 1/2 cup powdered sugar
- 1/2 cup fresh lemon juice
- Zest of 1 lemon
- 1 cup strong brewed coffee, cooled
- 24 ladyfingers
Instructions
- In a large mixing bowl, beat the heavy cream until soft peaks form.
- In another bowl, mix the mascarpone cheese, powdered sugar, lemon juice, and lemon zest until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- Quickly dip each ladyfinger into the cooled coffee and layer them in a serving dish.
- Spread half of the lemon mascarpone mixture over the ladyfingers.
- Repeat with another layer of ladyfingers and the remaining creamy topping.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Garnish with extra lemon zest or fresh berries when ready to serve.
