Description

A delightful twist on classic Rice Krispie Treats with a refreshing lemon flavor, perfect for any occasion.


Ingredients

  • 3 tablespoons unsalted butter
  • 10 ounces marshmallows (mini marshmallows work like a charm!)
  • 6 cups Rice Krispies cereal
  • Zest of 1 large lemon
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Melt the butter in a large saucepan over medium heat.
  3. Add the marshmallows and stir continuously until completely melted and smooth.
  4. Remove from heat and stir in lemon zest, lemon juice, and vanilla extract.
  5. Fold in Rice Krispies cereal and a pinch of salt until well coated.
  6. Press the mixture into the prepared baking dish evenly.
  7. Let cool at room temperature for about 30 minutes.
  8. Once cool, cut into squares or rectangles and serve.

Notes

For an extra touch, drizzle melted white chocolate on top before slicing.
