Ingredients

- 3 tablespoons unsalted butter
- 10 ounces marshmallows (mini marshmallows work like a charm!)
- 6 cups Rice Krispies cereal
- Zest of 1 large lemon
- 1/4 cup fresh lemon juice (about 1–2 lemons)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Grease a 9×13-inch baking dish with butter or non-stick spray.
- Melt the butter in a large saucepan over medium heat.
- Add the marshmallows and stir continuously until completely melted and smooth.
- Remove from heat and stir in lemon zest, lemon juice, and vanilla extract.
- Fold in Rice Krispies cereal and a pinch of salt until well coated.
- Press the mixture into the prepared baking dish evenly.
- Let cool at room temperature for about 30 minutes.
- Once cool, cut into squares or rectangles and serve.
Notes
For an extra touch, drizzle melted white chocolate on top before slicing.
