Description

Energizing Lemon Blueberry Cottage Cheese Protein Bites are wholesome, high-protein, and naturally sweetened snacks.


Ingredients

Scale
  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • 1 ripe banana (mashed)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/2 teaspoon baking powder
  • 1/2 cup fresh or frozen blueberries

Instructions

  1. Set oven to 375°F (190°C) and grease or line a mini muffin tin.
  2. In a mixing bowl, mash banana until smooth.
  3. Add cottage cheese, eggs, maple syrup, vanilla, lemon zest, and baking powder. Whisk until well mixed.
  4. Gently fold in blueberries without overmixing.
  5. Spoon batter into muffin wells, about 3/4 full.
  6. Bake for 20–25 minutes, or until lightly golden and set.
  7. Let rest 5 minutes, then transfer to a rack to cool completely.
