Ingredients

- 1 cup full-fat cottage cheese
- 2 large eggs
- 1 ripe banana (mashed)
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- Zest of 1 lemon
- 1/2 teaspoon baking powder
- 1/2 cup fresh or frozen blueberries
Instructions
- Set oven to 375°F (190°C) and grease or line a mini muffin tin.
- In a mixing bowl, mash banana until smooth.
- Add cottage cheese, eggs, maple syrup, vanilla, lemon zest, and baking powder. Whisk until well mixed.
- Gently fold in blueberries without overmixing.
- Spoon batter into muffin wells, about 3/4 full.
- Bake for 20–25 minutes, or until lightly golden and set.
- Let rest 5 minutes, then transfer to a rack to cool completely.
