Description

Delightful no-bake lemon cream pie bars that are quick and easy to prepare, perfect for busy days and gatherings.


Ingredients

Scale
  • 1 cup crushed graham crackers
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup heavy whipping cream

Instructions

  1. Prepare an 8×8-inch baking pan by lining it with parchment paper.
  2. In a mixing bowl, combine crushed graham crackers, granulated sugar, and melted butter, then press into the pan to form the crust. Chill in the refrigerator.
  3. In a large bowl, beat the softened cream cheese with powdered sugar until smooth. Add fresh lemon juice and zest, mixing until well combined.
  4. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the lemon mixture.
  5. Pour the lemon cream filling over the chilled crust, smooth the top, and cover with plastic wrap. Chill in the fridge for at least 4 hours.
  6. Once set, lift the bars out of the pan and slice into bars. Serve chilled.

Notes

Use a microplane to zest lemons for best flavor. These bars can be made a day in advance and can also be frozen for 2-3 months.
