- 1 cup crushed graham crackers
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 1 (8-ounce) package cream cheese, softened
- 1 cup powdered sugar
- 1 cup fresh lemon juice
- Zest of 1 lemon
- 1 cup heavy whipping cream
Instructions
- Prepare an 8×8-inch baking pan by lining it with parchment paper.
- In a mixing bowl, combine crushed graham crackers, granulated sugar, and melted butter, then press into the pan to form the crust. Chill in the refrigerator.
- In a large bowl, beat the softened cream cheese with powdered sugar until smooth. Add fresh lemon juice and zest, mixing until well combined.
- In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the lemon mixture.
- Pour the lemon cream filling over the chilled crust, smooth the top, and cover with plastic wrap. Chill in the fridge for at least 4 hours.
- Once set, lift the bars out of the pan and slice into bars. Serve chilled.
Notes
Use a microplane to zest lemons for best flavor. These bars can be made a day in advance and can also be frozen for 2-3 months.
