Description

A delicious and healthy alternative to traditional pasta, this Keto Creamy Tuscan Zucchini Noodles with Sausage dish features creamy sauce combined with zucchini noodles, sausage, and fresh spinach.


Ingredients

Scale
  • 4 medium zucchini
  • 8 oz sausage, sliced
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchini and set aside.
  2. In a large cast-iron skillet, heat olive oil over medium heat and sauté the sausage until browned, about 8 minutes. Remove and set aside.
  3. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  4. Pour in the heavy cream, Italian seasoning, and parmesan cheese. Simmer and whisk until thickened.
  5. Add the spinach and sun-dried tomatoes, then return the sausage to the skillet.
  6. Fold in the zucchini noodles and cook for 2–3 minutes until heated through. Season with salt and pepper, and serve hot.

Notes

Don’t overcook the zucchini noodles to keep them firm. You can swap the sausage for chicken or shrimp for a different protein option.
