Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon as it cooks (about 5-7 minutes).
- Stir in the diced onion and minced garlic. Sauté until the onion becomes translucent (about 3-4 minutes).
- Pour in the chicken broth and add the diced tomatoes (with juices). Stir well to combine.
- Add the dried Italian herbs, salt, and pepper. Bring the mixture to a gentle boil.
- Once boiling, add the tortellini to the pot. Cook according to package instructions, usually around 3-5 minutes, until they float to the top.
- Stir in the baby spinach and cook for an additional minute until wilted.
- Taste the soup and adjust the seasoning if needed. Add more salt, pepper, or herbs to suit your preference.
- Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley if desired.
