Description
Classic Italian Pizzelle are delicate, thin waffle cookies flavored with anise and vanilla, perfect for sharing during holidays or special occasions.
Ingredients

- 3 eggs
- 3/4 cup sugar
- 1 1/2 tsp vanilla extract
- 1/2 tsp anise extract (up to 1 tsp for stronger flavor)
- 1 3/4 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp kosher salt
- 8 tbsp melted unsalted butter
Instructions
- In a medium bowl, whisk together the eggs, sugar, vanilla extract, and anise extract until well combined.
- Incorporate the flour, baking powder, and kosher salt into the wet mixture. Mix thoroughly until the batter is smooth and free of lumps.
- Add the melted unsalted butter to the batter and gently mix until fully combined.
- Follow your pizzelle maker manufacturer’s instructions to preheat the iron properly.
- Spoon a heaping tablespoon of dough onto the center of each area of the heated pizzelle iron. Close the iron and cook for 30-45 seconds until the pizzelle turns a light golden color. If lighter, cook for a few more seconds as needed.
- Carefully remove the still-soft pizzelle from the iron and place them on a cooling rack. Allow them to cool completely to become crisp.
- Once cooled, optionally trim any parts that extend beyond the design edges for a neat finish.
