Description

Classic Italian Pizzelle are delicate, thin waffle cookies flavored with anise and vanilla, perfect for sharing during holidays or special occasions.


Ingredients

  • 3 eggs
  • 3/4 cup sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp anise extract (up to 1 tsp for stronger flavor)
  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp kosher salt
  • 8 tbsp melted unsalted butter

Instructions

  1. In a medium bowl, whisk together the eggs, sugar, vanilla extract, and anise extract until well combined.
  2. Incorporate the flour, baking powder, and kosher salt into the wet mixture. Mix thoroughly until the batter is smooth and free of lumps.
  3. Add the melted unsalted butter to the batter and gently mix until fully combined.
  4. Follow your pizzelle maker manufacturer’s instructions to preheat the iron properly.
  5. Spoon a heaping tablespoon of dough onto the center of each area of the heated pizzelle iron. Close the iron and cook for 30-45 seconds until the pizzelle turns a light golden color. If lighter, cook for a few more seconds as needed.
  6. Carefully remove the still-soft pizzelle from the iron and place them on a cooling rack. Allow them to cool completely to become crisp.
  7. Once cooled, optionally trim any parts that extend beyond the design edges for a neat finish.
