Ingredients

  • 3 cups Rice Chex
  • 3 cups Wheat Chex
  • 2 cups Mini Pretzels
  • 1 cup Pecans
  • 1 cup Sliced almonds
  • 1 cup Unsalted Butter
  • 1 cup Light Brown Sugar
  • 1/2 cup Light Corn Syrup
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Toffee Bits

Instructions

  1. Preheat your oven to a low 250°F (120°C).
  2. Line two large baking sheets with parchment paper.
  3. In a large mixing bowl, combine Chex cereals, pretzels, and mixed nuts. Toss gently to distribute evenly.
  4. In a medium-sized saucepan, combine unsalted butter, light brown sugar, and light corn syrup over medium heat. Stir until melted and sugar dissolves.
  5. Once boiling, reduce heat slightly and let simmer for 4 to 5 minutes, stirring constantly.
  6. Remove from heat and stir in vanilla extract and baking soda. The mixture will bubble up.
  7. Pour the hot toffee sauce over the dry cereal mixture and stir quickly to coat everything evenly.
  8. Divide the coated mix between the two baking sheets, spreading it out into a single layer.
  9. Bake for a total of 1 hour, stirring every 15 minutes to ensure even cooking.
  10. After 1 hour, remove from oven and sprinkle toffee bits over the warm mix, stirring gently to adhere.
  11. Allow to cool completely on the baking sheets before breaking into clusters.
