  • 2 pounds boneless, skinless chicken breasts
  • 8 slices of bacon, chopped
  • 1/2 cup brown sugar, packed
  • 1/4 cup soy sauce
  • 6 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch (for thickening, optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Rinse and pat the chicken breasts dry. Place them in the bottom of your slow cooker.
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving the drippings.
  3. In the same skillet, combine brown sugar, soy sauce, minced garlic, black pepper, salt, and red pepper flakes (if using). Stir until well combined and the sugar starts to dissolve.
  4. Pour the sauce over the chicken breasts, ensuring they are coated well.
  5. Sprinkle the cooked bacon on top of the chicken in the slow cooker.
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours. The chicken should be tender and cooked through.
  7. If you prefer a thicker sauce, remove the chicken once it’s cooked. Whisk cornstarch into a small amount of water and stir it into the sauce. Cook on high for an additional 15-20 minutes until thickened.
  8. Once ready to serve, garnish with chopped fresh parsley if desired.
