- 1 medium onion, chopped
- 3 cloves garlic, minced
- 28 oz crushed tomatoes
- 4 cups low-sodium beef broth
- 8 oz lasagna noodles, broken into pieces
- 2 tsp Italian seasoning
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- In a large pot over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and cook until fragrant (about 30 seconds).
- Increase heat to medium-high and add ground beef; cook until browned, breaking it apart with a wooden spoon.
- Stir in crushed tomatoes and beef broth; bring to a gentle simmer.
- Add broken lasagna noodles and Italian seasoning; cook until noodles are tender (about 10 minutes), stirring occasionally.
- Remove from heat and stir in shredded mozzarella until melted. Ladle soup into bowls and top with fresh basil.
