Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup whipped cream (for filling)
  • 2 tbsp powdered sugar (for filling)

Instructions

  1. Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper and lightly grease.
  2. In a mixing bowl, whisk eggs and granulated sugar until creamy.
  3. In another bowl, combine flour, baking powder, and salt.
  4. Gradually add dry ingredients to the egg mixture until smooth.
  5. Gently fold in vanilla extract.
  6. Spread batter evenly in the prepared pan and bake for 12-15 minutes until golden brown; test doneness with a toothpick.
  7. Remove from oven and turn onto a powdered sugar-dusted kitchen towel; roll up tightly using the towel.
  8. Once cooled, unroll gently and spread whipped cream mixed with powdered sugar over the surface.
  9. Re-roll without the towel, slice into pieces, serve, and enjoy!
