- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup vanilla pudding (store-bought or homemade)
- 1 cup chocolate ganache
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a bowl, combine 1 cup all-purpose flour and 1 teaspoon baking powder. Set aside.
- In a large bowl, cream together 1/2 cup softened butter and 1/2 cup sugar until light and fluffy.
- Beat in 2 large eggs, one at a time, then stir in 1 teaspoon vanilla extract until well combined.
- Gradually blend in the flour mixture and 1/2 cup milk until smooth and fully combined.
- Using a cookie scoop, fill each cupcake liner about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
- Once cooled, cut a small hole in the center of each cupcake and fill it with 1 cup of vanilla pudding.
- Drizzle 1 cup of chocolate ganache over the tops of the cupcakes and let it set before serving.
Notes
For a richer ganache, let it cool slightly before pouring it over the cupcakes.
