Description

Delightful cupcakes that capture the classic flavors of Boston Cream Pie with a light and fluffy texture, rich vanilla pudding filling, and glossy chocolate ganache topping.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup vanilla pudding (store-bought or homemade)
  • 1 cup chocolate ganache

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a bowl, combine 1 cup all-purpose flour and 1 teaspoon baking powder. Set aside.
  3. In a large bowl, cream together 1/2 cup softened butter and 1/2 cup sugar until light and fluffy.
  4. Beat in 2 large eggs, one at a time, then stir in 1 teaspoon vanilla extract until well combined.
  5. Gradually blend in the flour mixture and 1/2 cup milk until smooth and fully combined.
  6. Using a cookie scoop, fill each cupcake liner about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool completely in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
  9. Once cooled, cut a small hole in the center of each cupcake and fill it with 1 cup of vanilla pudding.
  10. Drizzle 1 cup of chocolate ganache over the tops of the cupcakes and let it set before serving.

Notes

For a richer ganache, let it cool slightly before pouring it over the cupcakes.
