- 2 tablespoons Fresh parsley (Optional, perfect for garnishing.)
Instructions
- Heat a drizzle of olive oil in a skillet over medium heat. Add the sliced yellow onions and cook for 7-8 minutes until they soften. Lower the heat and sauté for an additional 20-30 minutes, stirring occasionally, until they are golden and sweet. During the last 5 minutes, stir in minced garlic and optional crushed red pepper flakes for an extra kick.
- Preheat your oven to 475°F. On a floured surface, roll out the fresh pizza dough into a round shape about 12-14 inches wide. Carefully transfer the dough onto parchment paper and pierce it gently with a fork to prevent bubbling.
- Spread a generous layer of pumpkin puree evenly over the dough, leaving about a 1/2 inch border all around. Then, pile on the caramelized onions and garlic mix, and finish with a sprinkle of freshly grated gouda cheese.
- Slide the parchment paper with the assembled pizza onto a preheated baking stone or baking sheet. Bake for 12-15 minutes until the crust is beautifully crisp and the cheese has melted into gooey perfection. Top with chopped fresh parsley before slicing into wedges.
