Ingredients

  • 4 cups Sweet Potatoes (Thinly sliced)
  • 2 cups Heavy Whipping Cream (Can substitute with coconut cream)
  • 2 cloves Minced Garlic (Fresh garlic yields the best results)
  • 1 teaspoon Salt (Adjust to taste)
  • 1/2 teaspoon Black Pepper (Increase for spicier flavor)
  • 1 cup Gruyere Cheese (Shredded)
  • 1/2 cup Parmesan Cheese (Shredded)
  • 2 tablespoons Fresh Thyme (Sprinkle just before serving)

Instructions

  1. Preheat your oven to 400ºF (200ºC) and spray a 9×13-inch baking dish with cooking spray.
  2. Thinly slice sweet potatoes into 1/8-inch rounds and layer evenly in the baking dish.
  3. In a mixing bowl, whisk together heavy cream, minced garlic, salt, and black pepper; pour over sweet potatoes.
  4. Bake for 40 minutes, stirring halfway to ensure even cooking.
  5. Add Gruyere and Parmesan cheese on top and bake for an additional 15 minutes until golden brown.
  6. Let sit for a few minutes and garnish with fresh thyme before serving.
