Instructions
- Preheat your oven to 400ºF (200ºC) and spray a 9×13-inch baking dish with cooking spray.
- Thinly slice sweet potatoes into 1/8-inch rounds and layer evenly in the baking dish.
- In a mixing bowl, whisk together heavy cream, minced garlic, salt, and black pepper; pour over sweet potatoes.
- Bake for 40 minutes, stirring halfway to ensure even cooking.
- Add Gruyere and Parmesan cheese on top and bake for an additional 15 minutes until golden brown.
- Let sit for a few minutes and garnish with fresh thyme before serving.
