Ingredients

  • 2 cups Granulated Sugar
  • 1 cup Sour Cream
  • 1 teaspoon Coconut Extract
  • 4 large Egg Whites
  • 3 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 cup Milk
  • 1 can Crushed Pineapple
  • 4 cups Powdered Sugar
  • 1 cup Shortening
  • 1 cup Toasted Coconut Flakes
  • 1 teaspoon Vanilla Extract

Instructions

  1. In a medium saucepan over medium heat, combine sugar, cornstarch, crushed pineapple, and water. Stir continuously until thickened, about 5-7 minutes.
  2. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  3. Cream together unsalted butter and granulated sugar for about 3 minutes until light and fluffy in a large mixing bowl.
  4. Add sour cream, coconut extract, and egg whites, beating until combined.
  5. Gradually mix in the dry ingredients with milk until just combined. Divide batter evenly among pans and bake for 21-23 minutes.
  6. While cake layers cool, prepare the buttercream frosting by beating together shortening and softened butter until smooth.
  7. Gradually add powdered sugar and mix in milk and coconut extract until rich and spreadable.
  8. Once cake layers have cooled, level the tops if necessary. Spread buttercream frosting and cooled pineapple filling between layers.
  9. Top with final layer of buttercream on top and sides of the cake, smoothing the finish.
  10. Press toasted coconut flakes onto the sides and decorate with icing swirls and tropical garnishes. Let set for 30 minutes before slicing.
