- 1 cup Milk
- 1 can Crushed Pineapple
- 4 cups Powdered Sugar
- 1 cup Shortening
- 1 cup Toasted Coconut Flakes
- 1 teaspoon Vanilla Extract
Instructions
- In a medium saucepan over medium heat, combine sugar, cornstarch, crushed pineapple, and water. Stir continuously until thickened, about 5-7 minutes.
- Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
- Cream together unsalted butter and granulated sugar for about 3 minutes until light and fluffy in a large mixing bowl.
- Add sour cream, coconut extract, and egg whites, beating until combined.
- Gradually mix in the dry ingredients with milk until just combined. Divide batter evenly among pans and bake for 21-23 minutes.
- While cake layers cool, prepare the buttercream frosting by beating together shortening and softened butter until smooth.
- Gradually add powdered sugar and mix in milk and coconut extract until rich and spreadable.
- Once cake layers have cooled, level the tops if necessary. Spread buttercream frosting and cooled pineapple filling between layers.
- Top with final layer of buttercream on top and sides of the cake, smoothing the finish.
- Press toasted coconut flakes onto the sides and decorate with icing swirls and tropical garnishes. Let set for 30 minutes before slicing.
