Instructions

  1. Gather your ingredients and clean the turkey bones if necessary.
  2. Chop your vegetables into large chunks.
  3. In a stock pot, add the turkey bones, vegetables, and herbs. Cover with cold water.
  4. Place the pot over medium-high heat and bring to a gentle simmer.
  5. Skim any foam or scum from the surface.
  6. Reduce heat to low and let the stock simmer for 4-6 hours (up to 8 hours for richer flavor).
  7. Carefully strain the stock through a fine mesh strainer into a clean pot or bowl.
  8. Let the stock cool, then transfer to containers for storage.
