Description

Delicious and moist cupcakes infused with fresh peaches and cream cheese, drizzled with honey.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup diced fresh peaches

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, beat the softened butter and cream cheese until smooth.
  3. Add the sugar and honey to the mixture and mix until fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. Gently fold in the diced peaches.
  8. Fill the cupcake liners about 2/3 full with the batter.
  9. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cupcakes in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week.
