- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup honey
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup diced fresh peaches
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, beat the softened butter and cream cheese until smooth.
- Add the sugar and honey to the mixture and mix until fluffy.
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Gently fold in the diced peaches.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Store cupcakes in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week.
