A quick and easy weeknight meal featuring juicy, caramelized honey lime chicken layered over creamy avocado and fluffy jasmine rice, presented in an impressive stack.

- 2 boneless, skinless chicken breasts, sliced into strips
- 2 tbsp golden honey
- 2 tbsp soy sauce (or tamari)
- 2 tbsp fresh lime juice
- 1 tsp fresh lime zest
- 1 tbsp olive oil
- Salt and freshly ground black pepper to taste
- 2 cups cooked jasmine rice
- 1–2 ripe avocados, sliced
- Fresh lime wedges for garnish
- 2 tbsp freshly chopped cilantro or chives
- 1 tsp toasted sesame seeds (optional)
Instructions
- In a medium bowl, whisk together the honey, soy sauce, fresh lime juice, lime zest, olive oil, salt, and pepper to create the honey lime marinade. Add the chicken strips and toss to coat. Let marinate for at least 20 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken strips in a single layer. Cook for 3–4 minutes per side until golden brown and cooked through. Set aside.
- Pack cooked jasmine rice tightly into a round mold, small bowl, or measuring cup. Invert onto a plate to create a rice cylinder.
- Artfully arrange the sliced avocado on top of the rice.
- Place the warm honey lime chicken strips over the avocado.
- Drizzle any leftover pan sauce over the chicken and rice stack. Garnish with chopped cilantro or chives and toasted sesame seeds, if using. Serve immediately with a lime wedge.
Notes
- For extra gloss, whisk 1 tsp cornstarch into 2 tbsp water and simmer in the skillet with leftover marinade for 1 minute. Spoon this glaze over the stacks.
- If you don’t have a round mold, a standard measuring cup or small bowl can be used.
- To make this recipe gluten-free, use tamari or a certified gluten-free soy sauce.
- Avocado can turn brown quickly; slice it just before assembling. A squeeze of lime juice can help prevent browning.
