  • 3 medium sweet potatoes, peeled and cubed

  • For the Honey Garlic Sauce:
  • ¼ cup honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 3 garlic cloves, minced

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed sweet potatoes and sliced red onion with olive oil, salt, and pepper. Spread them evenly onto the prepared baking sheet.
  3. Nestle the sausage pieces among the vegetables on the baking sheet.
  4. In a separate bowl, whisk together the honey, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, and smoked paprika (if using) to create the honey garlic sauce.
  5. Drizzle half of the honey garlic sauce over the sausage and vegetables on the baking sheet.
  6. Bake for 25–30 minutes, flipping the contents halfway through, until the sausage is browned and the sweet potatoes are fork-tender.
  7. Remove the baking sheet from the oven and drizzle the remaining honey garlic sauce over everything. Gently toss to coat.
  8. Serve immediately.
