- 2 tbsp low-sodium soy sauce
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 3 garlic cloves, minced

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the cubed sweet potatoes and sliced red onion with olive oil, salt, and pepper. Spread them evenly onto the prepared baking sheet.
- Nestle the sausage pieces among the vegetables on the baking sheet.
- In a separate bowl, whisk together the honey, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, and smoked paprika (if using) to create the honey garlic sauce.
- Drizzle half of the honey garlic sauce over the sausage and vegetables on the baking sheet.
- Bake for 25–30 minutes, flipping the contents halfway through, until the sausage is browned and the sweet potatoes are fork-tender.
- Remove the baking sheet from the oven and drizzle the remaining honey garlic sauce over everything. Gently toss to coat.
- Serve immediately.
