Ingredients

  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/3 cup honey
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons ketchup
  • 2 tablespoons water
  • 1 cup uncooked long grain or jasmine rice
  • 2 cups chicken broth or vegetable broth
  • 1 tablespoon olive oil or butter
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup frozen peas
  • 1/4 cup chopped green onions (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Combine meatball ingredients in a large bowl and form into meatballs.
  3. Sear meatballs in a skillet until browned on all sides.
  4. Prepare sauce by combining honey, soy sauce, ketchup, water, and garlic in a saucepan.
  5. Assemble the dish by layering rice, vegetables, meatballs, and sauce in the baking dish.
  6. Cover with foil and bake for 40 minutes, then uncover and bake for an additional 10-15 minutes.
  7. Let rest a few minutes before serving, garnished with green onions.
