- 1/4 teaspoon salt
- 1/3 cup honey
- 1/4 cup low sodium soy sauce
- 3 tablespoons ketchup
- 2 tablespoons water
- 1 cup uncooked long grain or jasmine rice
- 2 cups chicken broth or vegetable broth
- 1 tablespoon olive oil or butter
- 1/2 cup diced bell peppers (any color)
- 1/2 cup frozen peas
- 1/4 cup chopped green onions (optional for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Combine meatball ingredients in a large bowl and form into meatballs.
- Sear meatballs in a skillet until browned on all sides.
- Prepare sauce by combining honey, soy sauce, ketchup, water, and garlic in a saucepan.
- Assemble the dish by layering rice, vegetables, meatballs, and sauce in the baking dish.
- Cover with foil and bake for 40 minutes, then uncover and bake for an additional 10-15 minutes.
- Let rest a few minutes before serving, garnished with green onions.
