Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix together milk, vegetable oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into a greased 9-inch cast iron skillet.
  6. Bake for 25-30 minutes or until the top is golden and a toothpick comes out clean.
  7. Let cool for a few minutes before slicing and serving.

Notes

For extra flavor, consider adding some chopped jalapeños or shredded cheese to the batter.
