A delicious and healthy high-protein apple crumble, perfect for a guilt-free dessert or snack. This recipe is naturally sweetened, gluten-free, and packed with protein.


Ingredients

  • 1/2 cup apple, cored and diced
  • 2 tsp sugar-free brown sugar alternative
  • 1/2 tsp lemon juice (optional)
  • Dash of cinnamon
  • 3 tbsp gluten-free rolled oats
  • 2 tbsp (15g) protein powder (pea, whey, or casein)
  • 2 tbsp sugar-free brown sugar alternative
  • 1/8 tsp ground cinnamon
  • 1 tbsp vegan butter (or unsalted butter)
  • 12 tsp unsweetened applesauce

Instructions

  1. Preheat your oven to 350°F.
  2. Mix diced apples with 2 tsp sweetener, cinnamon, and lemon juice (if using).
  3. Grease a 1-cup ramekin and press the apple mixture into the bottom.
  4. In a bowl, mix oats, protein powder, remaining sweetener, cinnamon, butter, and applesauce until a thick crumble forms.
  5. Adjust with more applesauce if the mixture is too dry.
  6. Spread the crumble mix evenly over the apples.
  7. Bake for 12–15 minutes until golden on top.
  8. Let cool slightly and enjoy warm.

Notes

  • You can substitute whey or casein protein for pea protein.
  • For extra texture, add chopped nuts or shredded coconut to the crumble mix.
  • Make it in advance and reheat for a protein-rich breakfast.
  • Add a spoonful of Greek yogurt on top for even more protein.
