Description

A quick and easy no-bake recipe for mini key lime pies that are creamy, tart, and perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice (freshly squeezed)
  • 1 teaspoon lime zest
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Lime zest for garnish

Instructions

  1. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter until well incorporated.
  2. Press the mixture firmly into the bottoms and up the sides of a mini tart pan or muffin tin.
  3. Refrigerate the crusts for at least 1 hour to set.
  4. In a large bowl, whisk together sweetened condensed milk, key lime juice, and lime zest until smooth and thick.
  5. Spoon the filling into the chilled crusts, smoothing the tops with a spatula.
  6. In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
  7. Pipe or spoon the whipped cream onto each mini tart and garnish with additional lime zest.
  8. Refrigerate for at least 2 hours before serving to allow the pies to set.

Notes

These mini pies can be made dairy-free by substituting heavy cream with coconut cream and using dairy-free condensed milk.
