- 1 tbsp olive oil
- 12 oz smoked beef sausage, sliced
- 1 small onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp chili powder
- 1 cup long-grain white rice
- 1 can (15 oz) black beans, rinsed & drained
- 2 cups low-sodium chicken broth
- Salt and black pepper to taste
- ¼ cup fresh cilantro, chopped (for garnish)
- 1 lime, cut into wedges (for serving)
Instructions
- Rinse 1 cup long-grain white rice under cold water until clear. In a medium pot, combine rinsed rice with 2 cups water and a pinch of salt. Bring to a rapid boil. Reduce heat to low, cover tightly, and simmer for 15 minutes. Remove from heat, keep covered, and let rest for 10 minutes. Fluff with a fork.
- Slice 12 oz smoked beef sausage into ½-inch rounds. In a large skillet, cook the sliced sausage over medium-high heat for 4-6 minutes, flipping halfway, until browned and slightly crispy. Remove sausage from the skillet and set aside.
- In the same large skillet, heat 1 tbsp olive oil over medium heat. Add 1 small diced onion and 1 diced bell pepper; sauté for 5-7 minutes until softened. Add 3 cloves minced garlic, 1 tsp ground cumin, 1 tsp smoked paprika, ½ tsp dried oregano, and ½ tsp chili powder; cook for 1 minute until fragrant.
- Stir in 1 can rinsed and drained black beans and 2 cups low-sodium chicken broth. Bring to a gentle simmer. Reduce heat to low, cover tightly, and let cook for 15-20 minutes, stirring occasionally, allowing flavors to meld and the sauce to thicken.
- Stir the browned smoked beef sausage into the black beans during the last 5 minutes of cooking. Taste and season generously with salt and black pepper to taste.
- Spoon fluffy white rice onto plates. Ladle the black beans and smoked beef sausage mixture over the rice. Garnish with ¼ cup fresh chopped cilantro and serve with lime wedges. Enjoy immediately.
