  • 1 tbsp olive oil
  • 12 oz smoked beef sausage, sliced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp chili powder
  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, rinsed & drained
  • 2 cups low-sodium chicken broth
  • Salt and black pepper to taste
  • ¼ cup fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (for serving)

Instructions

  1. Rinse 1 cup long-grain white rice under cold water until clear. In a medium pot, combine rinsed rice with 2 cups water and a pinch of salt. Bring to a rapid boil. Reduce heat to low, cover tightly, and simmer for 15 minutes. Remove from heat, keep covered, and let rest for 10 minutes. Fluff with a fork.
  2. Slice 12 oz smoked beef sausage into ½-inch rounds. In a large skillet, cook the sliced sausage over medium-high heat for 4-6 minutes, flipping halfway, until browned and slightly crispy. Remove sausage from the skillet and set aside.
  3. In the same large skillet, heat 1 tbsp olive oil over medium heat. Add 1 small diced onion and 1 diced bell pepper; sauté for 5-7 minutes until softened. Add 3 cloves minced garlic, 1 tsp ground cumin, 1 tsp smoked paprika, ½ tsp dried oregano, and ½ tsp chili powder; cook for 1 minute until fragrant.
  4. Stir in 1 can rinsed and drained black beans and 2 cups low-sodium chicken broth. Bring to a gentle simmer. Reduce heat to low, cover tightly, and let cook for 15-20 minutes, stirring occasionally, allowing flavors to meld and the sauce to thicken.
  5. Stir the browned smoked beef sausage into the black beans during the last 5 minutes of cooking. Taste and season generously with salt and black pepper to taste.
  6. Spoon fluffy white rice onto plates. Ladle the black beans and smoked beef sausage mixture over the rice. Garnish with ¼ cup fresh chopped cilantro and serve with lime wedges. Enjoy immediately.
