- 1 cup dried navy beans (soaked overnight)
- 1 medium sweet onion (chopped)
- 1/4 cup pure maple syrup
- 4 oz bacon or smoked ham hock (diced)
- 1 can (14.5 oz) diced tomatoes
- 2 tsp Dijon mustard
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Salt to taste
Instructions
- Soak the dried navy beans overnight in cold water.
- Drain and rinse the beans, then place them in a large pot. Cover with fresh water by about two inches.
- Bring to a boil over medium-high heat, then reduce to low and simmer until tender, about 45 minutes.
- Sauté chopped onions in a skillet over medium heat until translucent, about 5 minutes.
- Add diced bacon or ham hock and cook until crispy.
- Combine cooked beans with sautéed onions and bacon in a large bowl. Mix in diced tomatoes, maple syrup, Dijon mustard, paprika, salt, and pepper.
- Transfer everything back into the pot or an oven-safe dish. Bake uncovered at 325°F for about 2 hours.
