Instructions

- In another bowl, mix the oil, eggs, crushed pineapple, grated carrots, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack. Once cool, frost with cream cheese frosting.
