Irresistibly delicious Hawaiian Pineapple Cake that celebrates the flavors of Hawaii with a moist texture from crushed pineapple and creamy cream cheese frosting.

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tsp baking soda
- 1 can (20 oz) crushed pineapple with juice
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- ½ cup shredded coconut (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, whisk together the flour, granulated sugar, and baking soda until well combined.
- Add the crushed pineapple (with juice), eggs, and vanilla extract to the dry mixture. Stir until just combined.
- Pour the batter into the prepared baking dish and spread evenly. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and let it cool completely in the baking dish.
- In a large bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and mix until you achieve a creamy consistency.
- Once the cake has cooled, spread the cream cheese frosting evenly over the top. If desired, sprinkle with shredded coconut for garnish.
Notes
Store any leftover cake in an airtight container in the refrigerator for up to 4 days. Can be frozen tightly wrapped for up to 2 months.
