- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)
- Cream cheese frosting (for topping)
Instructions
- Preheat oven to 350°F (175°C) and grease your baking pan.
- In a large bowl, mix carrots, pineapple, sugar, and oil.
- Add eggs one at a time, mixing well.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to wet ingredients; mix until just combined.
- Fold in nuts if desired.
- Pour batter into the pan; bake for 30-35 minutes.
- Cool completely before frosting.
Notes
For an extra moist cake, wrap it tightly in plastic wrap and let it sit overnight before frosting.
