Description

A delicious cake combining the warmth of grated carrots with the tropical sweetness of crushed pineapple.


Ingredients

  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • Cream cheese frosting (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease your baking pan.
  2. In a large bowl, mix carrots, pineapple, sugar, and oil.
  3. Add eggs one at a time, mixing well.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add dry ingredients to wet ingredients; mix until just combined.
  6. Fold in nuts if desired.
  7. Pour batter into the pan; bake for 30-35 minutes.
  8. Cool completely before frosting.

Notes

For an extra moist cake, wrap it tightly in plastic wrap and let it sit overnight before frosting.
