Description

A colorful and creamy macaroni salad that brings irresistible flavors and quick preparation to any gathering.


Ingredients

  • 1 lb elbow macaroni or small pasta shells
  • 1 cup carrots, shredded or finely chopped
  • 1 cup celery, finely chopped
  • 1 small red bell pepper, finely diced
  • 1/2 cup red onion, finely diced
  • 1/2 cup sweet pickle relish
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar (optional)
  • 1 tsp granulated sugar (optional)
  • 1/2 tsp paprika (optional)
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp onion powder (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Gather and measure all ingredients (5 minutes).
  2. Bring a large pot of salted water to a boil and cook macaroni until al dente (10 minutes). Drain and rinse under cold water.
  3. Finely chop celery, red bell pepper, and red onion; shred or finely dice carrots. Add to the bowl with pasta.
  4. In a medium bowl, whisk mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, paprika, garlic powder, and onion powder. Season with salt and pepper.
  5. Pour dressing over pasta and toss to combine. Cover and refrigerate for at least 1-2 hours.
  6. Before serving, give a final toss and garnish with parsley. Serve chilled.

Notes

Feel free to customize with add-ins like chicken or different vegetables. Serve chilled for the best flavor.
