Description

A flavorful and easy recipe for grilled chili lime chicken that’s perfect for weeknights or special gatherings.


Ingredients

  • 4 skinless chicken breasts (about 2 pounds)
  • 2 limes (juice and zest)
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon minced garlic (about 2 cloves)
  • 1 teaspoon cumin
  • 1 teaspoon dried cilantro (or 2 tablespoons fresh)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon dried lemongrass
  • 2 tablespoons olive oil
  • Salt & pepper to taste

Instructions

  1. In a medium bowl, combine lime juice, lime zest, chili powder, onion powder, minced garlic, cumin, dried cilantro, ground ginger, and dried lemongrass. Add the olive oil and whisk until well combined. Season with salt and pepper to taste.
  2. Place the chicken breasts in a ziplock bag or shallow dish and pour the marinade over them, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably up to 4 hours.
  3. Preheat the grill to medium-high heat (375-400°F) for about 10 minutes.
  4. Remove the chicken from the marinade, allowing excess to drip off. Grill chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
  5. Let the chicken rest for about 5 minutes before slicing and serve with lime wedges and a sprinkle of cilantro.

Notes

Ensure the chicken comes to room temperature before grilling for even cooking. Avoid flipping the chicken too often to develop a nice crust.
