Description

A moist, rich cake combining sweet potatoes and butter, perfect for family gatherings and afternoon treats.

Ingredients

Scale
  • 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the sweet potatoes.
  2. In a large mixing bowl, beat the softened butter and sugar together until creamy.
  3. Add eggs and vanilla extract, and beat until well incorporated.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add to the wet ingredients, alternating with buttermilk.
  5. Fold in the mashed sweet potatoes until fully combined.
  6. Pour the batter into a greased 9×13 inch baking pan and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let it cool before serving, optionally drizzled with a glaze of powdered sugar and milk.

Notes

Use canned sweet potatoes for a quicker option. Customize spices to your taste, and don’t skimp on the butter for richness.
