Instructions
- The oven should be heated to 350 degrees F (175 degC), and then line the baking pan with parchment.
- A large mixing bowl mixes together the butter that has softened, sugar granulated as well as brown sugar, until fluffy and light. Add vanilla extract and the egg until it is smooth.
- In a separate bowl, mix together the baking soda, flour, and salt. Add the dry ingredient to the mixing until it is well combined.
- Gently fold in the white chocolate chips and crushed raspberries, making sure not to overmix.
- Drop the dough in tablespoon-sized pieces onto the baking sheet, leaving approximately 2 inches of space between every cookie. The cookies should bake for between 10 and 12 minutes or until the edge is lightly golden, but the middle remains soft.
- Let the cookies sit on the baking tray for five minutes before transferring them onto an airtight rack to completely cool.
Notes
- To make them extra gooey just underbake them a bit and allow them to cool on the tray.
- You can replace fresh raspberries for jam if you desire an intense taste.
- Place them in an airtight container so that they keep them chewy and soft for a few days.
