- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon cinnamon
- 1/4 cup sugar (for topping)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, whisk together flour, baking powder, salt, and baking soda.
- In another bowl, whisk together granulated sugar, brown sugar, melted butter, eggs, vanilla extract, and buttermilk.
- Gradually combine the wet and dry ingredients until just mixed.
- In a separate bowl, mix cream cheese, powdered sugar, and cinnamon until smooth.
- Fill muffin cups halfway with batter, then add a dollop of cream cheese mixture, and cover with more batter until three-quarters full.
- Sprinkle cinnamon sugar topping over the filled muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool before serving.
Notes
To achieve a golden top, place muffins on the upper rack during the last few minutes of baking.
