Description

Quick and easy Gooey Cinnamon Cream Cheese Muffins with a fluffy exterior and indulgently gooey cream cheese center. Perfect for breakfast or a sweet snack!


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon cinnamon sugar mixture (for topping)
  • Optional: 1/4 cup white chocolate, melted (for drizzle)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, mix the melted butter, milk, eggs, and vanilla until fully combined.
  4. Pour the wet ingredients into the dry ingredients, and stir until just combined.
  5. In a small bowl, beat the cream cheese and powdered sugar until smooth.
  6. Fill each muffin liner halfway with batter, add cream cheese mixture, top with more batter, and sprinkle with cinnamon sugar.
  7. Bake for 18-20 minutes until golden brown.
  8. Allow to cool slightly and drizzle with melted white chocolate if desired.

Notes

Store muffins in an airtight container at room temperature for up to three days, or refrigerate for up to five days. You can also freeze them for up to three months.
