Description

Experience my classic gluten free chocolate yule log, a festive dessert that steals the spotlight at holiday gatherings.


Ingredients

Scale
  • 6 large Eggs (free-range, at room temperature)
  • 150 g Caster Sugar (or granulated sugar)
  • 50 g Cocoa Powder (unsweetened)
  • 50 g Gluten Free Plain Flour (or all-purpose gluten-free blend)
  • 1/4 tsp Xantham Gum (for improved texture)
  • 300 g Icing Sugar (sift for smooth results)
  • 300 g Unsalted Butter (at room temperature)
  • 300 g Dark Chocolate (high-quality)
  • 1 tbsp Icing Sugar (for dusting)
  • Edible Gold Glitter (optional)
  • Edible Holly Icing (optional, e.g., Sainsbury’s)

Instructions

  1. Preheat the oven to 180°C (Gas 4) and line your Swiss roll tin with baking paper.
  2. Separate the eggs by placing egg whites in one bowl and yolks in another. Beat the egg whites until stiff peaks form, gradually adding 50g of caster sugar.
  3. Whisk the egg yolks with the remaining sugar in a separate bowl until they become pale. Sift in the gluten-free flour, cocoa powder, and xantham gum.
  4. Combine the egg whites with the yolk mixture, folding carefully to maintain airiness.
  5. Spread the batter evenly into your prepared tin. Bake for about 20 minutes.
  6. Turn the hot sponge onto a sheet of sugared baking paper. Score a line about 2 inches from one edge to guide your rolling.
  7. Roll the sponge tightly with the baking paper still attached, cooling it on a wire rack.
  8. Melt the dark chocolate and let it cool slightly. Whip the softened butter and icing sugar until smooth. Mix in the cooled chocolate.
  9. Unroll the sponge carefully and spread the frosting evenly over it. Reroll tightly without the baking paper.
  10. Decorate your Yule Log by applying additional frosting and creating a bark effect using a fork.
