This Gluten Free Cauliflower Cheese is a delightful fusion of tender cauliflower and creamy cheese sauce, perfect for comfort food lovers.

Ingredients

Scale
  • 1 head Cauliflower (Use fresh or 500g frozen florets for convenience.)
  • 2 tablespoons Unsalted Butter (Swap with vegan butter for a dairy-free option.)
  • 2 tablespoons Plain Gluten Free Flour (Recommended is FREEE gluten-free plain flour for best results.)
  • 2 cups Milk (Opt for dairy-free milk if preferred.)
  • 1/4 teaspoon Ground Nutmeg (Introduces warmth and a hint of spice.)
  • 1 tablespoon Dijon Mustard (Adds a delightful tang.)
  • 200 grams Extra Mature Cheddar Cheese (Can replace with dairy-free cheese if needed.)
  • to taste Salt (Essential for balancing flavor.)
  • to taste Pepper (Essential for enhancing taste.)
  • to taste Optional Cheese Topping

Instructions

  1. Prepare the Cauliflower: Cook the cauliflower florets by boiling for about 5-6 minutes or steaming for 10 minutes until just tender.
  2. Melt the Butter: In a saucepan, melt the unsalted butter over low heat and whisk in the gluten-free flour to form a paste, cooking for about 30 seconds.
  3. Add the Milk: Gradually stir in the milk until achieving a smooth, thick sauce. Heat until just bubbling.
  4. Season the Sauce: Stir in nutmeg, Dijon mustard, salt, and pepper, followed by the cheddar cheese until melted.
  5. Combine and Serve: In an ovenproof dish, mix cooked cauliflower with cheese sauce until fully covered.
  6. Top and Bake: Sprinkle the optional cheese topping and bake at 200°C for about 10 minutes until bubbly and golden brown.
