Ingredients

- 1 tablespoon gelatin
- 2 tablespoons water
- 1 cup brewed coffee
- 1/3 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- Pinch of salt
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Combine gelatin with water and let it bloom for 5 minutes.
- Heat coffee, sugar, cinnamon, ginger, and salt in a saucepan until hot but not boiling (about 10 minutes).
- Stir in the bloomed gelatin until dissolved and remove from heat (2 minutes).
- Whip the cream until soft peaks form, then fold in the coffee mixture and vanilla extract (10 minutes).
- Pour mixture into dome molds and refrigerate for at least 4 hours to set (5 minutes).
- Once set, unmold the mousse and top with desired toppings (5 minutes).
- Serve and enjoy immediately!
Notes
Customize with chocolate ganache or caramel drizzle as desired. Store in the refrigerator in an airtight container for up to 3 days.
