Ingredients

  • 0.5 cups unsalted butter, melted
  • 1 teaspoon ground ginger

  • 16 oz cream cheese, softened
  • 1 cup dark brown sugar
  • 3 large eggs
  • 0.5 cup molasses
  • 0.5 cup sour cream
  • 0.5 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • Optional: Chopped nuts, chocolate chips for decoration

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine graham cracker crumbs, dark brown sugar, melted butter, and spices. Press the mixture into the bottom and slightly up the sides of the springform pan.
  3. In another bowl, beat the softened cream cheese until smooth. Gradually add dark brown sugar, mixing well. Add eggs one at a time, blending until fully combined.
  4. Mix in molasses, sour cream, heavy whipping cream, and vanilla. Blend in the spices and cornstarch.
  5. Pour the batter into the prepared crust and smooth the top. Place the springform pan in a roasting pan filled halfway with hot water.
  6. Bake for 85 minutes, then turn off the oven and let the cheesecake rest inside for 10-15 minutes.
  7. Remove from oven and let cool for an hour, then frost and decorate as desired.

Notes

For a creamier texture, ensure all ingredients are at room temperature before mixing. A water bath helps prevent cracks.
