- Optional: Chopped nuts, chocolate chips for decoration
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine graham cracker crumbs, dark brown sugar, melted butter, and spices. Press the mixture into the bottom and slightly up the sides of the springform pan.
- In another bowl, beat the softened cream cheese until smooth. Gradually add dark brown sugar, mixing well. Add eggs one at a time, blending until fully combined.
- Mix in molasses, sour cream, heavy whipping cream, and vanilla. Blend in the spices and cornstarch.
- Pour the batter into the prepared crust and smooth the top. Place the springform pan in a roasting pan filled halfway with hot water.
- Bake for 85 minutes, then turn off the oven and let the cheesecake rest inside for 10-15 minutes.
- Remove from oven and let cool for an hour, then frost and decorate as desired.

For a creamier texture, ensure all ingredients are at room temperature before mixing. A water bath helps prevent cracks.
