Ingredients

  • to 4 cups powdered sugar, as needed
  • to 2 cups crisp rice cereal or cornflakes (optional for crunch)
  • 12 to 16 oz white chocolate (melting wafers or chips)
  • candy eyes, as needed

Instructions

  1. Combine peanut butter, softened butter, vanilla extract, and salt until smooth.
  2. Gradually beat in the powdered sugar in two additions until a cohesive, rollable dough forms.
  3. If using, fold in crisp rice cereal or cornflakes.
  4. Scoop 1-tablespoon portions of the dough and roll them into balls or small ghost mounds.
  5. Place the rolled dough on a parchment-lined tray and chill in the refrigerator for 30–60 minutes until firm.
  6. Gently melt the white chocolate using short microwave bursts or a double boiler until smooth and fluid.
  7. Spoon or dip each chilled dough ball to fully coat it in melted white chocolate, allowing some to drip naturally to form ghost-like edges.
  8. While the chocolate is still tacky, press on candy eyes to create the ghostly faces.
  9. Chill the Ghostly Peanut Butter Balls until the chocolate coating is fully set.
  10. Serve slightly cool for the best texture.

Notes

  • If the dough crumbles, knead it briefly or add 1–2 teaspoons of peanut butter. If the dough is too soft, add more powdered sugar or chill it longer before rolling.
  • For classic peanut butter balls, swap the white chocolate for milk or dark chocolate.
  • To make buckeye-style treats, dip only about ¾ of the ball, leaving a circle of peanut butter exposed on top.
