A delicious and quick Southern staple, these Fried Cornbread Hoecakes are crispy on the outside and tender on the inside.

- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 large egg
- 3/4 cup buttermilk
- 2 tbsp vegetable oil or melted butter
- Additional oil for frying
Instructions
- In a medium bowl, whisk together the cornmeal, flour, baking powder, and salt until well combined.
- In another bowl, whisk together the buttermilk, egg, and vegetable oil or melted butter until smooth.
- Pour the wet ingredients into the dry mixture. Stir gently until just combined; avoid over-mixing to keep the hoecakes fluffy.
- In a skillet, heat about 2-3 tablespoons of oil over medium heat until hot but not smoking.
- Drop spoonfuls of batter into the skillet, flattening slightly. Cook for 2-3 minutes per side, until golden brown and crisp.
- Transfer the fried cornbread to a plate lined with paper towels to drain excess oil. Serve immediately.
Notes
For a healthier option, try spraying the skillet with cooking spray instead of adding oil.
