Description

A delicious and quick Southern staple, these Fried Cornbread Hoecakes are crispy on the outside and tender on the inside.


Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 3/4 cup buttermilk
  • 2 tbsp vegetable oil or melted butter
  • Additional oil for frying

Instructions

  1. In a medium bowl, whisk together the cornmeal, flour, baking powder, and salt until well combined.
  2. In another bowl, whisk together the buttermilk, egg, and vegetable oil or melted butter until smooth.
  3. Pour the wet ingredients into the dry mixture. Stir gently until just combined; avoid over-mixing to keep the hoecakes fluffy.
  4. In a skillet, heat about 2-3 tablespoons of oil over medium heat until hot but not smoking.
  5. Drop spoonfuls of batter into the skillet, flattening slightly. Cook for 2-3 minutes per side, until golden brown and crisp.
  6. Transfer the fried cornbread to a plate lined with paper towels to drain excess oil. Serve immediately.

Notes

For a healthier option, try spraying the skillet with cooking spray instead of adding oil.
