  • 23 medium-sized apples (approximately 3 cups), peeled, cored, and chopped
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

  • 1 cup granulated sugar

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces full-fat cream cheese
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. Peel, core, and chop about 2-3 medium-sized apples (approximately 3 cups). Set aside.
  3. In a large bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and ½ teaspoon of salt.
  4. In another bowl, mix 1 cup of granulated sugar, ½ cup of vegetable oil, and 2 large eggs until well combined. Stir in 1 teaspoon of vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped apples gently, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared baking pan, smoothing the top. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove from the oven and allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. While the cake cools, make the cream cheese frosting. In a mixing bowl, beat 8 ounces of cream cheese and ½ cup of unsalted butter (softened) until smooth. Gradually add 4 cups of powdered sugar and 1 teaspoon of vanilla extract, mixing until smooth and creamy.
  9. Once the cake is completely cool, spread the cream cheese frosting evenly over the top. Feel free to decorate with additional apple slices or a sprinkle of cinnamon for an extra touch.
