- 2–3 medium-sized apples (approximately 3 cups), peeled, cored, and chopped
- 2 cups all-purpose flour

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
- Peel, core, and chop about 2-3 medium-sized apples (approximately 3 cups). Set aside.
- In a large bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- In another bowl, mix 1 cup of granulated sugar, ½ cup of vegetable oil, and 2 large eggs until well combined. Stir in 1 teaspoon of vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped apples gently, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan, smoothing the top. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove from the oven and allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- While the cake cools, make the cream cheese frosting. In a mixing bowl, beat 8 ounces of cream cheese and ½ cup of unsalted butter (softened) until smooth. Gradually add 4 cups of powdered sugar and 1 teaspoon of vanilla extract, mixing until smooth and creamy.
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top. Feel free to decorate with additional apple slices or a sprinkle of cinnamon for an extra touch.
