- 3.5 pounds beef short ribs bone-in
- to taste Kosher salt
- to taste cracked black pepper
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 large yellow onions
- 1 tablespoon tomato paste
- 4 cloves garlic
- 4 sprigs fresh thyme
- 2 cups red wine
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon balsamic vinegar
- 1 teaspoon sugar
- 6 slices baguette
- 0.75 cup Gruyère cheese
Instructions
- Season the short ribs with kosher salt and cracked black pepper.
- Sear the short ribs in a large pot over medium-high heat with olive oil for about 3-4 minutes on each side until browned.
- Remove the ribs and set them aside. In the same pot, add butter and sliced onions.
- Stir often for about 15-20 minutes, caramelizing until they are golden brown.
- Stir in the tomato paste and sliced garlic, cooking for an additional 3-4 minutes.
- Add the thyme sprigs and bay leaves. Pour in the red wine and beef broth, then scrape the bottom.
- Return the short ribs to the pot, bring to a boil, reduce the heat, cover, and simmer for about 2-3 hours.
- Prepare the crostini by arranging baguette slices on a baking sheet and topping with Gruyère cheese.
- Broil for 1-2 minutes until melted and bubbly.
