Ingredients

  • 3.5 pounds beef short ribs bone-in
  • to taste Kosher salt
  • to taste cracked black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 large yellow onions
  • 1 tablespoon tomato paste
  • 4 cloves garlic
  • 4 sprigs fresh thyme
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon sugar
  • 6 slices baguette
  • 0.75 cup Gruyère cheese

Instructions

  1. Season the short ribs with kosher salt and cracked black pepper.
  2. Sear the short ribs in a large pot over medium-high heat with olive oil for about 3-4 minutes on each side until browned.
  3. Remove the ribs and set them aside. In the same pot, add butter and sliced onions.
  4. Stir often for about 15-20 minutes, caramelizing until they are golden brown.
  5. Stir in the tomato paste and sliced garlic, cooking for an additional 3-4 minutes.
  6. Add the thyme sprigs and bay leaves. Pour in the red wine and beef broth, then scrape the bottom.
  7. Return the short ribs to the pot, bring to a boil, reduce the heat, cover, and simmer for about 2-3 hours.
  8. Prepare the crostini by arranging baguette slices on a baking sheet and topping with Gruyère cheese.
  9. Broil for 1-2 minutes until melted and bubbly.
  10. Serve the tender French Onion Short Ribs with the Gruyère Crostini.
