- 2 pounds baby potatoes
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup shredded Gruyère cheese
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Boil potatoes till fork-tender, then drain.
- Caramelize onions in olive oil and add garlic.
- Stir in beef broth and simmer.
- Layer potatoes in a dish and pour onion mixture over them.
- Top with cheese and bake for 20-25 minutes.
