Ultimate Fluffy Egg Sandwiches to Brighten Your Breakfast

- 12 large eggs
- 1 cup milk
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh cracked black pepper
- 3 cups hot water
- 4 pieces burger buns
- 2 Tablespoons unsalted butter
- 6–8 ounces freshly grated white cheddar cheese
- 1–2 cups fresh baby arugula
- 2–3 Tablespoons chopped chives
- 1 Tablespoon olive oil
- 1/4 cup mayo
- 2 Tablespoons Dijon mustard
Instructions
- Preheat the oven to 300°F. Line an 8×8-inch square baking pan with parchment paper and set it inside a larger rimmed baking pan.
- Whisk together the eggs, milk, salt, and pepper in a large bowl until smooth.
- Pour the egg mixture into the prepared baking dish. Pour hot water around the baking dish in the rimmed baking sheet.
- Bake in the preheated oven for 40-45 minutes until the edges are mostly set.
- Toss the arugula with olive oil and a pinch of salt while the eggs cook.
- Mix the mayo and Dijon mustard in a small bowl.
- Carefully remove the eggs and water bath from the oven and let cool slightly.
- Preheat the oven to broil. Brush melted butter on the burger buns.
- Broil the buns for 2-3 minutes, then add cheese and broil for another 1-2 minutes.
- Spread the mayo mixture on the bottom buns.
- Slice the baked eggs into squares and place them on the bottom buns, topped with arugula and the top buns.
