Ultimate Fluffy Egg Sandwiches to Brighten Your Breakfast


Ingredients

  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked black pepper
  • 3 cups hot water
  • 4 pieces burger buns
  • 2 Tablespoons unsalted butter
  • 68 ounces freshly grated white cheddar cheese
  • 12 cups fresh baby arugula
  • 23 Tablespoons chopped chives
  • 1 Tablespoon olive oil
  • 1/4 cup mayo
  • 2 Tablespoons Dijon mustard

Instructions

  1. Preheat the oven to 300°F. Line an 8×8-inch square baking pan with parchment paper and set it inside a larger rimmed baking pan.
  2. Whisk together the eggs, milk, salt, and pepper in a large bowl until smooth.
  3. Pour the egg mixture into the prepared baking dish. Pour hot water around the baking dish in the rimmed baking sheet.
  4. Bake in the preheated oven for 40-45 minutes until the edges are mostly set.
  5. Toss the arugula with olive oil and a pinch of salt while the eggs cook.
  6. Mix the mayo and Dijon mustard in a small bowl.
  7. Carefully remove the eggs and water bath from the oven and let cool slightly.
  8. Preheat the oven to broil. Brush melted butter on the burger buns.
  9. Broil the buns for 2-3 minutes, then add cheese and broil for another 1-2 minutes.
  10. Spread the mayo mixture on the bottom buns.
  11. Slice the baked eggs into squares and place them on the bottom buns, topped with arugula and the top buns.
