Description
Florida Orange Juice Creamsicle Baked Oats is a delightful breakfast treat that combines the fresh citrus flavor of Florida orange juice with the creamy texture of a yogurt creamsicle topping.
Ingredients
Scale
- 1 cup Florida Orange Juice, room temperature
- 2 large eggs, room temperature
- ½ cup pure maple syrup, room temperature
- ¼ cup milk, room temperature
- 2 tablespoons unsalted butter, melted and cooled
- 2 teaspoons orange zest
- 1 tablespoon vanilla extract
- 2¼ cups old-fashioned rolled oats
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- ½ cup Greek yogurt
- 1½ tablespoons powdered sugar
- 1 tablespoon Florida Orange Juice
- ¼ teaspoon vanilla extract
- 1 teaspoon orange zest
- 1 medium orange, cut into segments, peel removed (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper to prevent sticking.
- In a large mixing bowl, whisk together the eggs, pure maple syrup, milk, melted and cooled unsalted butter, vanilla extract, orange zest, and Florida orange juice until well combined and smooth.
- In a separate bowl, mix the old-fashioned rolled oats, baking powder, baking soda, and kosher salt evenly to ensure proper rising.
- Add the dry oat mixture to the wet ingredients and stir until all ingredients are fully incorporated, creating a thick oat batter.
- Pour the oat batter into the prepared baking dish and spread it out evenly. Bake in the preheated oven for 35 to 40 minutes, or until the top turns golden brown and the center is set. Test doneness by inserting a toothpick in the center; it should come out mostly clean.
- While the oats are baking, whisk together Greek yogurt, powdered sugar, Florida orange juice, vanilla extract, and orange zest in a small bowl until the topping is smooth and creamy.
- Allow the baked oats to cool for 5 to 10 minutes before slicing. Cut into squares and serve warm, topped generously with the yogurt creamsicle topping. Garnish with orange segments if desired.
